  • Manual selection of grapes from our own low-yielding vineyard “La Montaña” with chalk and clay soils. Cold, pre-fermentative maceration to obtain the maximum varietal aromas in the juice. Delicate, temperature-controlled pump-overs using the “pigeage” technique during the fermentation and maceration. Drained using gravity and no press. Aged in French oak and terracotta amphora. Aged in the bottle before going on sale.
