  • Manual selection of grapes from our own low-yielding vineyards. Cold, pre-fermentative maceration to obtain the maximum varietal aromas in the juice. Delicate, temperature-controlled pump-overs using the “pigeage” technique during the fermentation and maceration. Drained using gravity and no press. Aged in French oak, selection of the best Syrah and Grenache barrels for the final blend before bottling. Aged in the bottle before going on sale.
